We love this chicken. The marinade whips up in a minute in the food processor or blender.

Preparation time does not include time to marinate. So the marinade i use for this chicken is adapted from bobby flays mexican red chicken with grilled black corn and quinoa relish.

I skipped the relish because this chicken is absolutely perfect for using for tacos as i have done for this recipe. The marinade for this chicken is based on a mexican street food called sinaloa chicken.

This is a really tasty glaze for chicken. I was really impressed by how well it sticks and does not run off even in the high heat of the grill.

I used a combination of chicken breasts and thighs.
